Ingredients:
- 1 tbs of finely chopped coriander roots and stems
- 1 long green chilli, chopped
- 1 tbs of finely grated ginger
- 1 tbs of each ground tumeric and crumin
- 1 tbs of vegetable oil
- 1 large onion fnely chopped
- cinnamon grilled
- curry leaves
- 100 g of canned chopped tomatoes
- 1 kg of green praws peeled with tails infact cleaned
- streamed white rice to serve
- Using a mortar and pestle pound coriander, chilli and ginger stir in turmeric and cumin
- Heat oil in a frying pan over medium-high heat. Aded onion stirring for 5 minutesor until softened. Add coriander mixture, cinnamon and curry leaves. Stir for one minute. Add tomatoes and 375 ml of water.
- Bring to the boil then reduce heat to low and shimmer for 10 minutes or until thichering.
- Add prawns and stir for 5 minutes or until just cooked season then serve with rice.
