Chicken Curry Mauritian style

Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 large potatoes, cut into quarters
  • 1 small onion, slices
  • 1 tablespoon chopped thyme leaves
  • 5 curry leaves
  • 1/2 tablespoon ginger paste
  • 1/2 tablespoon garlic paste
  • 3 tomatoes, chopped
  • 2 tablespoon curry powder
  • 1 handful of finely chopped coriander leaves
  • 2 fined chopped spring onions
  • 3 tablespoon oil
  • Water
  • Salt to taste
  1. Cut chicken into equal pieces and wash throughly
  2. Heat 1 tbsp oil in a pan and add the chicken
  3. Cook for 3-5 minutes, remove and put aside
  4. In the same pan heat 2 tbsp of oil and add sliced onion, thyme, curry leaves and stir for 2 minutes
  5. Add the curry powder in the pan and add some water to make a paste
  6. Add the ginger/garlic paste and add some water, cover and slimmer for 5 minutes
  7. Add the chicken and potatoes, stir well, cover and cook until half done
  8. Add the chopped potatoes, salt and more water if required
  9. Cover and cook until the chicken, potatoes and tomatoes are completely done (check regularly)
  10. Once the chicken is done, check for the concistency, turn off the heat and garnish withcoriander leaves and spring onion
