Ingredients for dough:

  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 2 teaspoons oil
  • 1 cup of water
  • Vegetable oil for frying

For filling

  • 1 cup of boiled potato, cut into cubes.
  • 1/2 cup of green peas, cooked.
  • 1/2 cup yellow onion, diced.
  • 2 teaspoons minced fresh ginger
  • 2 teaspoons minced garlic
  • 2 hot green chilli peppers
  • 1 teaspoon ground coriander-cumin seed
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • 2 tablespoons oil
  • salt to taste

To make the dough:

  1. Sieve the flour and salt together in a bowl.
  2. Add in oil.
  3. Mix in 5 tablespoons of water.
  4. Turn out the dough and kneed it for 4 minutes.
  5. Rest the dough for 30 minutes. Cover it with plastic and let it rest while you make the filling.

To make the filling:

  1. Heat the oil in a large saucepan.
  2. Toast the cumin seeds.
  3. Add the onion and ginger.
  4. Add the garlic, chilli peppers, turmeric, salt and garam masala.
  5. Add the potatoes and peas.
  6. Let the filling cool.

To assemble the samosas:

  1. Divide the dough into eight equal portions.
  2. Roll each portion into chapatis. A chapati is a thin, flat circle bread or dough.
  3. Cut each chapati into two halves.
  4. Stuff and folt the samosa.
  5. Repeat for the remaining chapatis and filling.
  6. Heat the oil.
  7. Fry the samosas.
  8. Serve with anything you like and enjoy!
