  1. Ingredients:
  • 9 large eggs (room temperature)
  • 1 pinch of salt
  • 1 1/2 cups granulated sugar
  • 1 2/3 cups all purpose flour
  • 1/4 teaspoon baking powder
  • Lemon zest (original) or orange zest (optional)
  • 1 tablespoon granulated sugar (optional for top of cake)
  • Icing
  1. Preheat the oven to 350°F. Grease and parchment paper line at 10 inch tube pan, set aside.
  2. Beat the eggs with the salt until light. Gradually beat the sugar at medium speed and beat for at least 20 minutes, ad rind if using.
  3. In a separate bowl combine the flour and baking powder and stir with a fork or whisk. At low speed, add the flour mixture to the eggs one heaping tablespoon at a time, blending well after each addition, and scaping down the sides of the bowl when necessary.
  4. Pour the batter into the pan and bake for approximately 40 minutes, or until a cake tester insert comes out clean (cake will spring back to a light touch).
  5. If you like a crust on the top of the cake, sprinkle the 1 tablespoon of sugar on top of the batter prior to baking.
  6. Let the cake cool in the pan for 10 minutes, then remove it from pan and peel off parchment paper. Let cook completely on rack. Dust with icing sugar before serving if desired.
