King Praws Rougaille

Type: One dish

Ingredients:

  • 1 tbs of finely chopped coriander roots and stems
  • 1 long green chilli, chopped
  • 1 tbs of finely grated ginger
  • 1 tbs of each ground tumeric and crumin
  • 1 tbs of vegetable oil
  • 1 large onion fnely chopped
  • cinnamon grilled
  • curry leaves
  • 100 g of canned chopped tomatoes
  • 1 kg of green praws peeled with tails infact cleaned
  • streamed white rice to serve
  1. Using a mortar and pestle pound coriander, chilli and ginger stir in turmeric and cumin
  2. Heat oil in a frying pan over medium-high heat. Aded onion stirring for 5 minutesor until softened. Add coriander mixture, cinnamon and curry leaves. Stir for one minute. Add tomatoes and 375 ml of water.
  3. Bring to the boil then reduce heat to low and shimmer for 10 minutes or until thichering.
  4. Add prawns and stir for 5 minutes or until just cooked season then serve with rice.
