Borsh Soup – Russia

Ingredients:

  • Beef stock
  • Potatoes
  • Beetroot
  • Carrots
  • Cabbage
  • Salt
  • Onion
  • Sunflower oil
  • Shredded beetroot
  • Tomato puree
  • Pepper
  • Parsley
  • Bay leaves
  1. In boiling beef stock add chopped potatoes, beetroot and carrots, then let it cook for a while, then add chopped cabbage (white). Salt as you need.
  2. Separately fry/slimmer onion in sunflower oil, add shredded beetroot, tomato puree, salt, pepper.
  3. Cover with lid and let slimmer a bit.
  4. Add fried onion and beetroot to the soup, bring to boil, add parsley, dill and bay leaves.
  5. For 2 l of stock: 3 potatoes, 2 carrots, 1/2 of beetroot, 1/4 of cabbage, 1/2 of onion, 1/2 beetroot (half left from the boiling one), 1 lb spoon tomato puree.
